I'm sorry that this post is a day late. Jon and I are moving to North Carolina in August and I have been busy trying to get my ducks in a row to find a teaching job. Anyway, more on moving later here is a brunch recipe from yours truly and some bargains happening right now!
Acai bowls (pronounced Ah-sigh-EE) are really healthy, delicious and very popular in Hawaii. One of the (million) things I miss most about living there (besides my friends) is all the incredible food. There are so many amazing Acai bowl stands and shops there with a lot of different variations of the Acai bowl. Acai bowls are not popular yet here in South Carolina but they are actually very simple to make at home! I buy these Sambazon Superfruit Packs to make my own Acai bowls for breakfast or lunch. Here is the recipe I use.
1 pack of Sambazon Superfruit (frozen Acai berry mix) (add two packs of you want it thicker)
1/2 banana (or any fresh fruit you want)
1/2 cup of frozen berries (to add antioxidants and flavor)
1/4 cup of almond milk (or milk of choice)
Toppings: ( you can get creative here!)
1/2 cup of granola
1/2 cup of shaved coconut
1/2 cup or strawberries (or any berries you like)
drizzle with honey or agave 😋 (I sometimes add dark chocolate chips or cacao nibs)
Run the Acai pack under warm water for 15 second to break it up. Stick Acai pack in blender, add milk, banana, any fruit you want and blend until mix is thick. Pour in to bowl and add your toppings 👍🏼🍌🍓
